Cast Iron Herbed Pork Tenderloin

This easy herbed pork tenderloin is seared for a couple minutes in a cast iron skillet on the stovetop. It is then transferred to the oven to bake at 375F for ~12-15 minutes.

Herbed cast iron pork tenderloin will go with nearly anything. It is a delicious, fast, and healthy "go to" dinner meal. This recipe doesn't require much thought, ingredients, or preparation.

Serve cast iron pork tenderloin with a quick broccoli or asparagus side dish. Toss the vegetable in the butter sauce that's left in the pan before serving.

Cast Iron Herbed Pork Tenderloin Tips

Use a pan / skillet that can go straight from the stovetop to the oven, like cast iron. This cooking method provides a beautiful sear on the pork tenderloin while also retaining the heat as it finishes in the oven at 375F.

The oven will make the pork more tender than trying to cook the whole tenderloin on the stovetop alone.

Letting the pork tenderloin (or any meat) acclimate to room temperature for ~ 20-30 minutes before cooking will ensure more even cooking.

Ingredients

  • 1lb pork tenderloin
  • 1 tablespoon + vegetable oil
  • 2 teaspoon mixed dried herbs or Herbs de Provence
  • 1 ½ tablespoon unsalted butter, sliced into 3 pieces.
  • ½ teaspoon salt
  • pinch black pepper

Instructions

  • Preheat oven to 375F.
  • Set pork tenderloin on a plate on the counter for ~ 30 minutes before cooking.  
  • Before cooking lightly rub/sprinkle on salt, black pepper, and herbs.
  • Bring a heavy bottomed & oven proof pan to medium high heat.  Add enough vegetable oil to lightly coat the bottom of the pan.  Turn your oven vent on - there may be a fair amount of smoke.  Grab a splatter guard as well, if you've got one.
  • When the oil is hot, add the tenderloin and pan fry ~ 2 minutes on each side (there are usually 3 sides for a tenderloin).  
  • Add butter tabs to the top of the pork tenderloin and immediately transfer to the oven and cook an additional 12-15 minutes or until internal temperature reaches 135F.  
  • Tent loosely and let sit 5-10 minutes before slicing.

Notes

  • Letting meat acclimate to room temperature for ~ 20-30 minutes  before cooking will ensure more even cooking.

    I made this last night and it was quick and easy and very tasty.

    For the herbs I used dried thyme and oregano, and a small amount of fennel seeds. In our oven, 13 minutes on convection roast was just right.
