Roasted Delicata Squash with Maple Syrup, Pecans, Cranberries

This roasted delicata squash recipe combines sliced delicata squash with maple syrup, cranberries, and pecans. Roast delicata squash with the skin on in the oven at 425F ~ 25 min.

Delicata Squash Does Not Need to Be Peeled

Delicata Squash doesn't come around a lot (fall - winter)  so grab it when you see it.  

Delicata squash is one of the only winter squashes that is easy to work with and that you can also eat the skin once it's roasted or cooked.

That's super cool, since most winter squashes need to be peeled, and peeling squash is generally not an easy task.

Simply cut the squash in half, remove the seeds, and slice delicata into half moons.

How To Cook Delicata Squash with Maple, Cranberries, Pecans

Roast delicata squash at a temperature of 425F for ~20-25 minutes total.

  • Preheat oven to 425F. Line a baking sheet with foil or parchment for easy clean up.
  • Cut delicata squash in half, remove seeds, and slice into moon shapes.
  • Toss delicata squash with olive oil, salt, and pepper.
  • Roast ~ 12 minutes on one side.
  • Remove pan, flip to other side, and drizzle delicata squash with maple syrup.
  • Cook squash an additional 10 minutes.
  • Toss the dried cranberres and nuts on to the sheet pan and cook another 2-3 minutes or until warm.

Maple Syrup Will Burn Delicata Squash If Put On Too Soon

The maple syrup will begin to burn onto the pan (or foil) if you put it on the delicata squash at the beginning.  Burnt maple syrup will have a bitter taste.

To avoid burning the roasted delicata squash in this recipe: put the maple syrup on the squash after ~12 minutes of cooking when flipping the squash to the second side.

How To Roast Delicata Squash Seeds

Rinse and dry the delicata squash seeds.  Toss with a touch of olive oil and a bit of salt.  Bake on a sheet pan uncovered at 300F ~ 12-15 minutes or until crunchy and fragrant.

Ingredients

  • 2 medium delicata squash (~ 1 ½ lb), seeded and sliced
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 Tbsp maple syrup
  • ¼ cup dried sweetened cranberries
  • ¼ cup chopped pecans

Instructions

  • Preheat oven to 425F.  Line a baking sheet with aluminum foil or high heat parchment for easy clean up.
  • Slice the squash lengthwise.  Scoop the seeds out with a spoon and discard or save for roasting at another time. 
  • Cut squash in ½" slices (moon shaped).  Place in bowl and toss with olive oil, salt, and pepper.
  • Arrange squash in single layer on baking sheet and roast (uncovered) ~ 12 minutes. 
  • Flip delicata squash and drizzle with maple syrup. 
  • Roast an additional 10-12 minutes or until browning and tender.  
  • In the last couple minutes in the oven, add cranberries and pecans just to warm up.
  • Taste and season with salt and pepper as desired.  Happy eating!  Beckie

Notes

  • The maple syrup will begin to burn onto the aluminum foil if you put it on at the beginning.  This leaves a bitter taste so put the syrup on when you flip the squash the first time.
  • Want a snack?  Rinse and dry the squash seeds.  Toss with a touch of olive oil and a bit of salt.  Bake uncovered at 300F ~ 12-15 minutes or until crunchy and fragrant.
