Ingredients
- 12 ounces udon noodles
- 1 lb sweet potatoes, peeled & ½" dice
- 28 ounces (~ 4 cups) canned coconut milk
- ½ cup vegetable broth
- 1 tsp salt
- 2 ½ tsp curry powder
- ½ tsp ground coriander
- 2 Tbsp fresh lime juice
- 4 ounces (~ 1 cup) carrots, grated
- 1 lb small broccoli florets, cut from thick stalks
- ¾ cup roasted unsalted peanuts, chopped - garnish
- 1 lime, wedged into 6 pieces - as garnish
- sriracha sauce to taste - as garnish
Instructions
- Bring a large pan to medium high heat and add coconut milk, vegetable broth, curry powder, salt, and coriander. Bring to a boil, reduce heat and simmer covered ~ 10 minutes.
- Add sweet potatoes and cook ~ 5 minutes covered.
- Add udon noodles and cook ~ 7-8 minutes uncovered.
- Add carrots, broccoli and lime juice. Cook uncovered ~ 4 minutes or until sweet potatoes, noodles, and broccoli are tender. Add sea salt to taste.
- Garnish with peanuts and a wedge of lime. Add sriracha if you want to spice it up.
