Asparagus And Leek Soup

Make Vegan Asparagus Soup With No Cream Or Butter

This delicious vegetarian asparagus leek soup already has no cream so it's easy to make it vegan too.

Use your favorite non dairy alternative to butter for a vegan asparagus soup with leeks.

Use The Asparagus Stems as a Base For the Soup

Snap off the asparagus stem ends at the natural break that's toward the end of the stem. Use the woody (tougher) end of the asparagus that you snapped off as the base for the soup stock.

Cut off a handful of the tender asparagus tips to use as a garnish if you want to fancy up your asparagus and leek soup. Sometimes, I skip this step and don't use a garnish for the soup if trying to save time.

Having said that, for the asparagus garnish - blanch the asparagus tips in the broth before adding the asparagus for a couple minutes to get them tender. Pull them out and set aside for later and use as a garnish.

How To Clean and Cut Leeks For Asparagus Soup

Leeks are notoriously dirty in between all the layers. They do grow in the dirt so that makes sense!

Trim the root end of the leek and cut off the dark green leaves (keep the pale green part of the leek).  Cut the leeks at the intersection where the dark and pale green meet.

Cut leek half lengthwise and run under cool water to get rid of any dirt in the layers. See video.

Slice the leeks. Run the sliced leeks under water again if needed.

TIP: Save the dark green leaves of the leek and make vegetable stock later.

Variations on Asparagus and Leek Soup

Don't have shallots? Use extra leeks or a bit of onion instead. Don't have leeks? Don't make the soup 🙂

Vegan? Cool, use your favorite non-dairy butter alternative for a no cream asparagus leek soup.

Don't have chicken broth? Try vegetable or mushroom broth. In a pinch, add water and salt to taste with a couple of herbs like Italian seasonings of sage, rosemary, thyme, parsley, or oregano.

Blending Asparagus Leek Soup

Blend the asparagus leek soup in a blender, vitamix, or with an immersion blender.

What's the difference in texture of the pureed soup between an Immersion blender and a Vitamix blender ? The blender or vitamix will make a smoother soup consistency, but the immersion blender is easier to clean and less steps.

The vitamix or even a ninja will puree a soup smoother than most blenders, but we don't need to start dissecting our kitchen inventory. Just use whatever you have available.

Ingredients

  • 2 lb (2 bunches) asparagus
  • 6 cups vegetable broth
  • 3 tablespoon unsalted butter
  • ½ cup (1 large) shallots, minced
  • ¾ cup (1 medium) leek, trimmed & sliced
  • 6-8 sprigs thyme
  • ¼ teaspoon salt

Instructions

  • Trim the delicate tips and rough stem ends off the asparagus and cut the remaining tender asparagus into 1" pieces.  Set tips aside in a small bowl.  
  • Add tough ends and thyme to a medium pot, add broth, and bring to a boil.  Reduce heat to a simmer, cover, cook ~ 20 minutes. Remove stem ends and thyme with slotted spoon and discard.
  • Optional For Garnish: Add ¼ of asparagus tips to broth and blanch (cook) ~ 1 minute or until tender.  Remove tips with slotted spoon and place in an ice bath.  Drain water once cooled and set tips aside on a paper towel for garnish.
  • Bring a medium sized pan to medium high heat and melt butter.  
  • Add leeks and shallots and cook ~ 4-5 minutes or until tender.  Add this mixture to the pot of broth and also add remaining uncooked asparagus pieces.
  • Bring to a boil, reduce heat, and simmer covered (stirring occasionally) an additional 25 minutes or until asparagus is very tender.
  • Immersion blend or add to a blender (you may need to do this in batches) and puree soup until smooth.  
  • Add salt to taste and garnish with asparagus tips.  Happy soup eatin'!  Beckie

    This soup is delicious, and relatively easy to make. It takes about an hour, as the chef said, but the end product is worth it. Also, you can be making other dishes during the time when the asparagus is simmering. I will definitely make this again!
