Crockpot Braised Orange Soy Short Ribs

This braised slow cooker beef short rib recipe with mushrooms, carrots, orange juice, soy sauce and ginger makes a delicious meal with tender and flavorful meat that falls apart when cooked on low all day.

Crock-pot meals make life so easy.  One pot, no mess, no clean up at dinner. God bless the crockpot!

There will be sauce at the bottom of the crockpot beef short ribs so serve it with noodles or rice to soak it up.  Throw in some potatoes at the bottom of the crockpot when you start cooking if you truly want only a "one pot dinner".

The Sriracha sauce makes this a touch spicy - omit or add less if you are sensitive to spice levels.

Don't have a crockpot?  Throw the beef short ribs and all remaining ingredients into a stockpot, bring to a boil, reduce heat, and simmer covered ~ 2 ½ hours or until tender.

Ingredients

  • 4 lb beef short ribs
  • 1lb mushrooms, sliced
  • 1 cup onions, diced
  • 6 (~1 lb) carrots, peeled & chunked
  • ½ cup soy sauce, regular or gluten free
  • 1 ½ tablespoon toasted sesame oil
  • 1 ¼ cup orange juice
  • 2 tablespoon garlic, minced
  • 2 tablespoon ginger, minced
  • 2 tablespoon Sriracha sauce
  • ⅓ cup cilantro, chopped as garnish

Instructions

  • Add all ingredients (except cilantro) to a large crock-pot and stir.  Cook on low 8 hours.
  • Top with fresh chopped cilantro and add sea salt to taste.  Serve with rice, egg noodles, or potatoes.  Happy Eating!  Beckie
