Easy Oven Roasted Fennel

This easy roasted fennel recipe is caramelized, soft, crispy, and naturally sweet - all at the same time. Simple oven roasted fennel is baked in the oven at 425F uncovered for around 25 minutes.

What Does Roasted Fennel Taste Like?

Fennel has a light licorice taste. It's delicious sliced thin and eaten raw in salads. It's also good cooked with onions as part of a soup base.

It is equally delicious when chunked or sliced and roasted uncovered in the oven until tender, caramelized, and browned. Roasting fennel in the oven brings out it's natural sweetness.

Fennel can be sliced or cut into chunks for baking in the oven. I prefer chunks for this easy roasted fennel recipe.

What Part of Fennel Do You Use For Cooking?

Generally, the part of the fennel that is used in cooking is the white bulb. Having said that, some of the more tender "fingers" or stalks originating from the fennel bulb can also be chopped and roasted. See / hear the video for more explanation.

The stalks closest to the fennel bulb will be tender but the stalks further out will have tough and fibrous skin.

The grocery store cut off a lot of the stalks and fronds on this fennel. But the delicate green leafy fronds are perfect if you want a pretty garnish over roasted fennel.

How To Roast Fennel

  • Preheat oven to 425F and line a baking sheet with aluminum foil or parchment or cook directly on an oil lined sheet pan.
  • Take the stalks off the fresh fennel bulb and roughly chunk the bulb.
  • Toss the fennel with olive oil, salt, and pepper and lay out spaciously on the sheet pan.  Don't overcrowd the pan.
  • Roast for ~12 minutes.  Remove from oven, move fennel around, and place back in oven for ~10-12 minutes or until browned and caramelized.

Troubleshooting Roasted Fennel

Fennel not browning in the oven?  Up your temperature to 450F and / or up your total cooking time. 

All ovens are different in their temperature calibration. Likewise they cook unevenly in the oven - there may be hotter areas in the oven.

How vegetables are baked or roasted vegetables turn out different based on the "tools" you use. For example: fennel roasted directly on the sheet pan roasts faster than fennel cooked on silicone mats, parchment, or foil.

You don't need to use aluminum foil for this fennel recipe, it's just an easy solution if you don't want to clean the sheet pan and are lazy like me 🙂

Lastly, don't overcrowd the sheet pan with fennel or it will steam and not roast. See image below for spacing on the pan.

What Pairs Well With Fennel?

Serve this simple roasted fennel recipe as a beautiful stand out side dish, as an addition to a grain or a garnish for a meat (New York Strip Steak), or vegetarian main dish (Coconut Red Lentils).

The stalks nearest to the bulb will still be tender and edible (they are at the bottom of the sheet pan). The skin will become fibrous and tough further out on the stalk.

Serve this easy roasted fennel recipe with a complementary dish. It could be used as a garnish on coconut red lentils, as a side addition to Lemon Orzo Pasta or as a garnish or side to Strip Steak or Poached Salmon.
