What Does Fennel Taste Like?

Fennel's texture is crunchy, clean, and crisp. The seeds, bulb, and foliage are all edible.  The leaves look similar to dill and is in the same plant family.

Fennel has a fresh and slightly licorice or anise taste. It generally blows my personal chef clients away with it's simplicity and taste.

How To Pick Fennel:

Look for compact firm fennel bulbs with no browning or splitting for this simple fennel salad with tomatoes or avocado.

Use a mandoline or food processor to carefully slice the fennel if you don't want to use a knife.

Make the Lemon Dressing For Fennel Salad

Most salad dressings are made by whisking in the oil slowly.  Sometimes, time is an issue and we want to eat faster.

Instead, add the fennel salad dressing ingredients into a mason jar and shake vigorously. EASY!

Notes

  • This video has added roasted sunflower seeds.  I don't always use them but feel free to add them.  I also use pine nuts sometimes, but mostly just it fennel salad without nuts.
  • This recipe was updated in April 2026 to also use lemon zest in the lemon dressing.
  • Don't want to make the dressing?  Cool, use your favorite store bought salad dressing.

Things In My Kitchen:

  • Mandoline for thinly slicing the fennel.  Mandoline's are not for the faint of heart.  Be sure to use the finger guards.  This is by far my favorite mandoline.
