Flavor Tips For Mediterranean Salad with Feta

Olives with the pits still in are the most flavorful but you will need to remember to tell your guests that the pits are still in, as they probably value their teeth 🙂

Block feta cheese is more flavorful than feta crumbles. Having said that, crumbles get dinner on the table faster!

Easy Italian Salad Dressing For Mediterranean Salad

Make the homemade Italian dressing recipe or use your favorite bottled Italian dressing for this Mediterranean Salad.

Most salad dressings are made by whisking in the oil slowly.  Sometimes, time is an issue and we want to eat faster.  Instead, toss the salad dressing ingredients into a jar with a lid and shake vigorously.

Add salt, oil, or vinegar to the homemade salad dressing to taste.

Ingredients

Ingredients Salad:

  • 1 medium heads (~4 cups) Romaine lettuce, chopped
  • ¼ cup red onions, thinly sliced
  • ½ cup can artichoke hearts, drained & chopped
  • ½ cup whole mixed olives, with pits
  • 1 medium tomatoes, wedged
  • ½ medium cucumbers sliced
  • ½ medium red pepper, chunked or sliced
  • ⅓ cup feta crumbles
  • Italian Dressing - recipe below or buy one

Ingredients Dressing (Or Buy a Pre-made Italian Dressing):

  • 1 tablespoon apple cider vinegar
  • pinch onion powder
  • pinch garlic powder
  • pinch paprika
  • pinch salt
  • ¼ teaspoon dried Italian herbs
  • pinch black pepper
  • 3 tablespoon e.v. olive oil

Instructions

  • Mix all salad dressing ingredients in a jar and shake vigorously.
  • Combine all salad ingredients except feta cheese in a bowl and toss with desired amount of dressing.
  • Plate and add 2 tablespoon feta crumbles on top of each salad.  Happy Eating!  Beckie
