Fast and flavorful scrambled egg and avocado tartine (toast) recipe. The crunchy toast (rye is my fav), topped with avocado and egg and drizzled in hot sauce.
Salty, spicy, satisfying. This is my go to easy power food for breakfast, lunch, dinner or snack. A tartine or toast is great for when you don't want the heaviness of a whole sandwich.
Tartine is the french word for a toasted open faced sandwich. So, toast, y'all 🙂
In Italy, little toasts (from a baguette) are called crostini (recipe recommendations below).

Ingredients
- 1 piece of bread, toasted
- ½ avocado, mashed
- 1 egg, scrambled
- 1 small tomato sliced
- 2 tsp hot sauce
- pinch salt
- pinch black pepper
Instructions
- Toast your bread. Mash ½ an avocado on it and add salt.
- Put your cooked scrambled egg on top of it.
- Drizzle with hot sauce.
- Slice a small tomato and eat it on the side. Add salt to taste. Happy eating! Beckie
