Need gluten free meatballs?  No problem - pulverize instant oats in a food processor and substitute them for the panko breadcrumbs. Or buy gluten free panko breadcrumbs.

Buffalo Meatballs Dinner Ideas:

This buffalo meatballs recipe can be served as an appetizer or us the meatballs and make:

  • a green salad with meatballs and a creamy dill dressing
  • add pasta and your favorite marinara and skip the dill sauce
  • add it to orzo and broth for a meatball soup
  • make a quinoa, vegetable, and meatball bowl
2 sheet pans of beef meatballs on two racks in the oven cooking.
If you use two sheet pans, change their position halfway through so that the bottom pan is on the top and the top is on the bottom during the second half of cooking.

Ingredients

Ingredient List Meatballs:

  • 1 lb ground buffalo (or beef)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoon mixed dry herbs or 2 tablespoon fresh herbs - whatever you got on hand!
  • 1 egg
  • ½ cup panko breadcrumbs
  • toothpicks

Ingredient List Dill Sauce:

  • ¾ cup sour cream
  • ⅓ cup mayonnaise
  • 2 teaspoon sugar
  • ¼ teaspoon salt
  • ⅓ cup fresh dill, chopped

Instructions

  • Preheat oven to 375F.

Make Dill Sauce:  

  • In a small bowl mix together all dill sauce ingredients.

Make Meatballs:  

  • Mix all meatball ingredients in a large bowl and roll into 1" balls.
  • Place on a baking sheet lined with foil or parchment (no oil is necessary).  
  • Bake ~ 10-12 minutes or until internal temperature of meatballs reaches 155F.
  • Poke a toothpick in each meatball and serve dill sauce in a small bowl on the side.
