Simple Seared and Baked Lamb Loin Chops

This simple seared and baked lamb loin chops recipe is a basic starter technique to learn how to make perfect lamb loin chops.

Easy, Fast, and Simple Lamb Loin Chops

These lamb loin chops are pan fried and oven baked. Why? Searing gives a nice caramelization and taste while finishing the lamb in the oven gives more even baking if that makes sense.

Sear first and then bake to get crispy on the outside and tender on the inside.

What are Lamb Loin Chops?

Loin Lamb chops include the tenderloin (the smaller meat side of the chop)and the strip loin (the larger meat side).

Think of a cow t-bone steak. The lamb tenderloin (the smaller side) is the filet mignon in the beef world and is incredible tender. The loin strip of lamb (the bigger side) is comparable to the tender New York strip steak in beef cuts.

Use An Oven Safe Pan For This Lamb Loin Chop Recipe

Any pan will work for this basic lamb loin chop recipe but I prefer cast iron as it holds heat evenly and goes from the stovetop to oven seamlessly.

Having said that, use any pan you got that can stand the 375F temperature of the oven. Most non-stick pans and handles can handle baking at 375F.

Optional Seasoning for Seared and Baked Lamb Loin Chops

The key is to add fresh herbs, seasonings, garlic, etc... to the butter as the meat is resting for five minutes. Five minutes is plenty of time in a hot pan to create a unique and flavorful butter sauce to drizzle over the top of these simple lamb loin chops.

Try adding some of these variations to the piping hot butter after removing the lamb chops:

  • diced or sliced garlic
  • diced shallots or onions
  • fresh or dried herbs like sage, thyme, parsely, mint, or rosemary
  • spices like curry powder, chili powder,
  • a dash of vinegar, lemon juice, or orange juice
  • small nuts like pine nuts or crushed almonds

This is a basic and simple seared and baked lamb loin chop recipe. This dish is perfect as is but can be used as a starter technique for a lot of different variations.

Ingredients

  • 6 lamb loin chops (~ 1 ½ pounds), 1 inch thick
  • ¼ teaspoon + salt
  • pinch black pepper
  • 1 tablespoon vegetable oil
  • butter
  • fresh thyme - optional

Instructions

  • Preheat oven to 375F
  • Remove lamb loin chops from refrigerator 20-30 minutes before cooking.
  • Dry off lamb chops with a paper towel and liberally salt and add a dash of black pepper to both sides.
  • Bring an oven safe skillet to medium high heat on stovetop.  When hot, lightly coat the skillet with enough vegetable oil to lightly cover the bottom of the pan.
  • Add lamb loin chops and sear for 3-4 minutes or until golden brown.
  • Flip and cook for 2-3 minutes (6 minutes total for both sides).
  • Add a tab of butter and place in oven at 375F.
  • Bake lamb loin chops for ~ 5-6 minutes for medium rare or until internal temperature of lamb reaches 125-130F.
  • Remove from pan and place on plate. Tent with aluminum foil for 5 minutes.
  • Spoon butter sauce over lamb and add salt to taste. Happy Eating!

Notes

  • See variation notes in recipe above to make unique butter sauces to drizzle over these simple seared and baked lamb loin chops.
  • Troubleshooting - If lamb is overcooked then maybe your oven runs too hot.  Try less time in the oven next time.  If lamb is undercooked, it can continue to be baked or re-seared on the stovetop.
