Ingredients
- 6 lamb loin chops (~ 1 ½ pounds), 1 inch thick
- ¼ teaspoon + salt
- pinch black pepper
- 1 tablespoon vegetable oil
- butter
- fresh thyme - optional
Instructions
- Preheat oven to 375F
- Remove lamb loin chops from refrigerator 20-30 minutes before cooking.
- Dry off lamb chops with a paper towel and liberally salt and add a dash of black pepper to both sides.
- Bring an oven safe skillet to medium high heat on stovetop. When hot, lightly coat the skillet with enough vegetable oil to lightly cover the bottom of the pan.
- Add lamb loin chops and sear for 3-4 minutes or until golden brown.
- Flip and cook for 2-3 minutes (6 minutes total for both sides).
- Add a tab of butter and place in oven at 375F.
- Bake lamb loin chops for ~ 5-6 minutes for medium rare or until internal temperature of lamb reaches 125-130F.
- Remove from pan and place on plate. Tent with aluminum foil for 5 minutes.
- Spoon butter sauce over lamb and add salt to taste. Happy Eating!
