Oven Baked Pecan Crusted Chicken

This easy crunchy pecan crusted chicken breast recipe is baked in the oven.  It's gluten free, paleo, keto, dairy free, sugar free, whole 30, and just plain delicious.

Pecan crusted chicken breast is a healthy, easy, and delicious dinner.

Food process or hand chop the nuts until finely chopped but still has some chunks, add the salt and cayenne pepper, and press into or lay on top of the chicken breast and bake at 400F.

This dish can be served with Lemon Dill Orzo Pasta or add some chunked carrots, potatoes, or broccoli and you have a one sheet pan oven baked dinner.

Serving Suggestion

Serve this Pecan Crusted Chicken Breast recipe with a soup as an appetizer, and a complementary side dish like green beans and Orzo or Quinoa.

Ingredients

  • 4 chicken breasts
  • 1 ½ cups pecans
  • ½ teaspoon salt
  • pinch cayenne pepper
  • pinch black pepper
  • ¼ cup olive oil
  • ¼ cup parsley, chopped - as garnish

Instructions

  • Preheat oven to 400F.
  • Finely chop or pulse the pecans lightly in a food processor and mix in salt and cayenne pepper.
  • Brush the chicken with olive oil on both sides and lightly salt and pepper.  Lay on a lined baking sheet.  Top the chicken with the pecan mixture and press down firmly.
  • Bake for ~30 minutes or until internal temperature of chicken reaches 165F.
  • Garnish with chopped parsley.  Happy Eating!  Beckie
