How To Grill Vegetables

Jump to Recipe

How do you grill vegetables? Easy, peasy.  Dust off your grill and get the veggies on it.

Hatch Green Chile Pepper Varieties.

Heat the cleaned grill to medium high (~400F). Oil the grates.  Toss the veggies in some oil and season with sea salt, pepper, and favorite spices or vinegars.

Don't overcrowd the grill. Give vegetables and meats space to sear. They will steam instead of caramelize with sear marks if the veggies are too close.

Chill. Don't overcrowd your grill.

Give them time on the grill. Peeking for the sear or grill marks is ok, but think about a "gentle peek" on one piece only. In time, you will also know where your grill runs the hottest or coldest.

Things In My Kitchen:

  • Weber Grill – I love this grill.  Small but still plenty big enough for 12 chicken thighs and 6-8 steaks.  Plus it’s easy to clean the grates.  You’ll want to grab the stand below probably as well.
  • Weber Grill Portable Stand – Rollable and compacts.

Instructions

  • Heat the cleaned grill to medium high (~400F). Oil the grates.  Toss the veggies in some oil and season with sea salt, pepper, and favorite spices or vinegars.
  • Skewer little veggies (stainless steel or soak bamboo ones) like tomatoes, okra, mushrooms, any chunks of veggies that could fall through the grates.  You can also use a grill grate basket.  Grill ~ 5-10 minutes depending on the veggie, flipping once (or two or three times - i.e. -corn).  Happy Grilling!  Beckie
