These are 20 of my favorite pantry recipes. "Easy to make" is a relative term so stay with me here 🙂
Give these recipes a go because you probably have most of these things in your kitchen already. And If you don't, there is a list below of basic ingredients you should have to stock your pantry.
Also recognize that you may not have everything in a recipe and modifying in cooking is easy! For example, the Creamy Tomato Bisque recipe calls for heavy whipping cream. Let's say you're in a pinch and only have half and half, milk, coconut milk, or broth. Use that instead. Don't have any of those. Use water and salt to taste.
Modify things based on what you have. If it's not a baked good (like the Falafel) recipe then nearly everything can be modified. Lastly, all of these recipes are vegetarian. If you like meat, add some cooked sausage, ham, andouille, diced chicken thighs or breasts, or shrimp.

Some of the beautiful ingredients in my kitchen are:
Baking Staples: flours, yeast, baking soda, baking powder, salt, sugar, nuts, chocolate, coconut flakes, evaporated milk, Chia seeds

Oils and Vinegars: olive oil, coconut oil, vegetable oil, balsamic vinegar, white wine vinegar
Grains: oat groats, all kinds of rice, farro, barley, quinoa, grits, oatmeal, granola, popcorn, dried breadcrumbs
Dry & Canned Legumes: split peas, red lentils, garbanzo beans, mung beans, black beans, cannellini beans, kidney beans, navy beans, brown lentils
Canned/Bottled Goods: tomatoes of any and every kind, tomato paste, hot sauce, Worcestershire sauce, pasta sauces, Indian sauces, soy sauce, spices, peanut butter, jelly, maple syrup, honey, vegetable/beef/chicken stock or cubes, canned vegetables, olives, capers, pepperoncini, salsa, pickles, coconut milk, mustard, barbecue sauce, ketchup, shelf stable almond milk, all your favorite spices. Last, I always have some dried wakame or kale/green powder for emergency greens.
Meats: beef jerky, sardines, tuna, canned soups
Dry Pasta: all kinds of regular pastas, rice noodles, egg noodles, packaged gnocchi
Snacks: We don't snack a ton but we always have some kind of cracker or chips, dried fruits, nuts, seeds.
Drinks: coffee, tea, and the usual mineral water, booze, and wine 🙂
Not technically pantry, but some good things to have in the refrigerator and freezer:
Refrigerator: onions, garlic, eggs, butter, almond milk or milk, cheese, lemons, limes, celery, miso paste, root vegetables (carrots, potatoes, sweet potatoes, beets, celeriac, fennel).
Freezer: frozen fruits & vegetables, frozen meats, bread, tortillas
